Chicken, Avo & Coriander Salad

I, like so many other women, often have super long days and the last thing I want to do when I get home is have to labour over the stove ! So I'm all about doing the quickest, easiest, but still healthy meals during the week. Don't get me wrong, I honestly do love cooking - especially on the weekends when I have some time and not totally exhausted from a tiring day at work!


This salad is higher in fat as it contains no carbs, and is just perfectly filling and tasty! With a good amount of plant fats with some animal fats, alongside the green leafy veg to help reduce acidity in the body - it's perfectly healthy!

SERVES 1

80g Chicken

1 teaspoon butter

1/2 wedge feta

1/2 small Avocado

15 unroasted cashew nuts

1/3 cup coriander

Large bowl mixed lettuce and baby spinach

Grill or microwave chicken until partly cooked and cut into slices

Fry chicken lightly in butter until cooked (Never fry so long that the butter turns brown!)

Toss all ingredients into bowl and voila!


You can use balsamic vinegar if desired, but I find it can distract from the coriander and cashews, which provide a lovely slightly sweet flavour!
