Super easy recipe for oat cookies
I had to share this recipe because it's the quickest, easiest thing to make, contains the right macro-nutrients in the right amounts : your carbs, protein and fat, and best of all you can eat it on the go! It's been so handy for me when I don't have a chance to sit down and eat a meal. It's so easy, just cut it into slices once baked and put it into your Tupperware.
INGREDIENTS:
3 eggs using only 1 yolk
1/2 cup oats (raw measure)
large tablespoon nut butter
Teaspoon cinnamon (or other spice such as ginger)
Mix, spray and cook a shallow baking dish, bake on 180 for 10 minutes and there you have it . Make sure you remove it as soon as it is cooked through to prevent it drying out. Sprinkle with Xylitol or Stevia to make it sweeter.
You can change it to your taste by using any other nut butter, or adding nuts; seeds; raisins and any other spices if you don't like cinnamon. But remember cinnamon is great for balancing blood sugar, which is also why I include it.
